Breakfast Attendant

Position Summary
Breakfast Attendants are responsible for executing all breakfast job tasks to ensure the highest level of guest and client satisfaction. Breakfast Attendants report directly to the Banquet Chef and Banquet & Events Manager.

Responsibilities + Duties

  • Conforms to and maintains the high standards of safety and cleanliness as set forth by Gordon Lodge
  • Meets, maintains, and acts in accordance to high personal cleanliness and dress code standards and requirements as set forth by Gordon Lodge
  • Displays courteous and professional behavior to all guests and coworkers at all times
  • Communicates clearly and concisely with coworkers and guests
  • Anticipates a guests’ needs and remains flexible and adaptive in service
  • Performs breakdown of breakfast in accordance to the standards and guidelines provided by a supervisor
  • Serves food and beverage in accordance to the health and safety standards and guidelines of Gordon Lodge, as provided by, and under the direction of a supervisor
  • Maintains cleanliness and stock pars in event spaces and food and beverage service areas

Breakfast Cook

Position Summary

Position of breakfast cook consists of managing the daily preparation of food items for a station or a specific area in a kitchen and cooking and plating all food orders in an efficient, healthful, and attractive manner.

Responsibilities + Duties

  • Present food using proper presentation techniques
  • Coordinate completion of menu items with server
  • Prepare work checklist and organize work stations for each shift
  • Check and maintain coolers and storage areas for cleanliness, quantity, and quality of food.

Full Time PM Dishwasher

Position Summary

Responsible for cleaning and sanitizing all areas of the kitchen and operate the dish washing machine in a safe, accident- free manner.

Responsibilities + Duties

  • Set up station according to Chef’s guidelines
  • Ensuring the availability of clean dishes by washing dishes, pots, pans, and flatware
  • Preparing dining areas and kitchen for next shift by cleaning and restocking cook stations
  • Cleaning machines and appliances used in the kitchen, such as coffee makers, pots, and pans, mixers, etc.
  • Sweeping and mopping floors, especially in the event that items are broken or spilled
  • Taking out the trash and rinsing garbage cans
  • Supporting other restaurant staff members by assisting with other tasks, as needed
  • Reporting kitchen accidents or violations of food safety codes and procedures

  • High School Diploma or equivalent
  • Minimal work experience
  • Strong problem solving and communication skills

Restaurant Bartender

Position Summary

Stocks bar, mixes and serves alcoholic drinks, maintains clean and orderly bar, and stocks as directed. Responsible for locking Top Deck at close.

Responsibilities + Duties

  • Inspects the bar prior to opening to ensure that adequate supplies are available
  • Replenishes stock and supplies as necessary
  • Follows set-up procedures
  • Prepares garnishes, mixes and pre-mixed drinks
  • Greets guests
  • Enters orders into POS system
  • Mixes, prepares and serves drinks according to the recipes and/or as directed by management
  • Presents bills to members for signature
  • Reports complaints to a manager as soon as they occur
  • Alerts member of management team if bartender determines a member or guest appears to be intoxicated
  • Maintains and cleans equipment as well as entire back bar area
  • Maintains records of liquors, beers and wine to ensure par stock is always maintained
  • Cleans and lock-ups according to Gordon Lodge policies and procedures
  • Must possess knowledge of the various wines
  • Waits on guests when necessary

Restaurant Server

Position Summary

Have a summer that you will never forget by joining the Gordon Lodge team for the 2023 season. You will experience Bailey’s Harbor’s premier destination that has been welcoming visitors for nearly a century. Sets tables and serves meals to guests according to well established rules of etiquette, and performs various duties to provide exemplarily service.

Responsibilities + Duties

  • Reports to Food & Beverage Director to receive instructions about the menu, familiarizes self with menu, paying particular attention to “specials”.
  • Fine-Tune tables assigned to server, checking for linen, glasses and silverware on table.
  • Provides immediate attention to all guests upon seating
  • Distributes menus, if applicable
  • Receives guests and takes drink and food order. Answers questions about the food and menu or makes suggestions about various dishes and wines
  • Places order in POS system
  • Places beverages on tray; delivers to guests
  • Serves beverages and food
    • Serves meal: places dishes, by course, in front of each person, serving from the left of the patron; may replenish water and butter if needed. An efficient server places dishes in front of each guest in such a manner that the guest may start to eat immediately upon being served
  • Checks back to ensure guests’ satisfaction
  • Removes soiled dishes, procures and serves coffee, after dinner drinks or dessert
  • Gives check to guests when they have finished eating
  • Performs pre- and post- work shift duties
  • Keeps assigned tables and bus station and other areas clean and tidy
  • Advises supervisor of complaints as they occur
  • Attends pre-shift meetings as required
  • Remain readily accessible and attentive to guests
  • Other tasks as assigned

A meal may consist of many courses and may be accompanied by various wines or beverages. The server must know how to regulate his/her service so that each course will immediately follow the one preceding it, so that guests do not feel a lack of attention. To perform this job competently, the server must know how long it takes to complete any course on the menu and must be able to intelligently plan for and regulate the service of numerous different meals when serving several groups simultaneously.

The following general guidelines are basic serving knowledge required of all servers:

  • Be courteous, obliging, and attentive. Always greet guests with a smile.
  • Inspect all dishes, glass and silver for cleanliness before serving.
  • Place dishes in front of the guest on the left and remove dishes from the right. Never “stack” dishes in front of guest when removing them.
  • Place and remove beverages from the right.
  • Never place fingers or thumbs inside dish or glass.
  • Handle cups and silver by handles, handle glass at base.
  • Serve ladies first if gentlemen are seated at the same table.
  • Clean table well before serving dessert.
  • Other side work and tasks as assigned by your supervisor.

Sous Chef

Position Summary

The Sous Chef (in conjunction with the executive chef) will be responsible for all food production, including that used for the restaurant and banquet functions. They will maintain the highest professional food quality and sanitation standards.

Responsibilities + Duties

  • Assist the executive chef in supervising food production for all food outlets at the Lodge.
  • Responsible for the daily operations of the kitchen. Provides professional leadership and direction to kitchen personnel. Ensures that all recipes, food preparations, and presentations meet the specifications of the Exec. Chef. Maintains a safe, orderly and sanitized kitchen. Demonstrates this by example, using proper food-handling techniques.
  • Ensure food quality in all outlets by overseeing preparation and managing inventory.
  • Manage kitchen staff by assisting with the recruitment, selection, hiring, orienting, training, assigning, scheduling, supervising, evaluating and carrying out disciplinary action as necessary in accordance with Gordon Lodge policies and applicable laws.
  • Approve product quality by training staff in preparation procedures and presentation standards; observing methods of preparation; tasting and smelling prepared dishes; viewing color, texture and garnishes; verifying portion sizes and ensuring that standards for food quality are consistently met
  • Assist Exec. Chef in control costs by estimating purchasing needs; minimizing waste using prep sheets, proper recipes and proper staff training
  • Maintain a clean and safe environment. Adhere to all federal, state and local sanitation and safety requirements; instructing staff in proper food preparation, food storage, use of kitchen equipment and utensils, sanitation and safety issues; ensuring clean and orderly refrigerators and kitchen
  • Assists the Exec. Chef with the upkeep, maintenance, and repair of all kitchen equipment and kitchen facilities
  • Assure smooth kitchen operation by assisting with product inventory, purchasing and receiving
  • Abide by and ensure proper execution of all Safe-Serve Certification Procedures. Must provide documentation showing that Safe-Serve Certification is current and up to date.
  • Implements and oversees regular cleaning and maintenance schedule for the kitchen and equipment as specified by the Exec. Chef
  • Ensure that representatives from the kitchen staff attend service line-ups and meetings as required
  • Adheres to policies and procedures designed to enhance and measure quality
  • Must be able to work off of a BEO’s to plan work, prepare banquets, and prepare daily production lists
  • Establishes buffet presentations.
  • Expedites food orders during peak service hours as needed
  • Manage and assist kitchen staff in producing food for all banquets and dining areas
  • Verifies that kitchen staff follows all recipes and portions servings correctly.
  • Maintains a physical presence in the kitchen during times of high business volume
  • During periods of high volume the Sous Chef will be expected to assist with food preparation, including cooking on the line
  • Assist with implementation and execution of safety training programs as determined by the Exec. Chef
  • Maintain knowledge of local competition and industry trends
  • Undertakes special projects as assigned by the Exec. Chef

  • Specialty/Technical Training required (4-Year College Degree or Culinary certification) and a minimum of 4 years of experience in culinary arts with at least 1 year of supervisory experience, or equivalent combination of education and experience preferred but not required
  • Ability to communicate effectively, perform multiple tasks simultaneously and prioritize needs in a fast- paced environment
  • Knowledge of applicable safety and sanitation procedures
  • Basic math skills
  • Knowledge of basic training techniques
  • Knowledge of food cost and inventory management principles required • Ability to forecast inventory and staffing needs required
  • Demonstrate ability to manage /coordinate multiple tasks with good judgment, initiative and follow- through
  • High confidence level in addressing unplanned or short-notice issues requiring sound judgment
  • Must arrive to work on time

Hours / Compensation

  • This is a full time, seasonal job (May – October)
  • Weekend hours are required
  • Nighttime hours are required
  • Holiday hours are required
  • Schedule is subject to change based on Gordon Lodge events and hours of operations
  • Hourly compensation, $22-25/hour, based on experience with bonus opportunity
